Gilly’s Homemade Mayonaise |

The base..
- 4 egg yolks
- 1½ cups oil (good oil, such as Flora or Canola)
- Juice of 1 lemon
- Roasted garlic cloves
- 1tsp seasoned sea salt (I use Ina Paarmans)
- 1tsp sugar
- 1tsp mustard powder
- Put yolk, lemon juice, garlic, salt, sugar and mustard powder into a food processor
- Slowly drizzle the oil into the whizzing mixture.
- If a little runny, add more oil, if a little too thick, add a bit of water
- Add lovely fresh yoghurt to thin the fat content.
The flavour…
Add either pesto, fresh herbs (ie. chopped parsley and spring onions, a sprig of mint, etc) chilli ginger jam, sweet chilli sauce or whatever you want to wring the changes of the flavour you are craving. |
