Gilly’s Homemade Mayonaise

The base..

  • 4 egg yolks
  • 1½ cups oil (good oil, such as Flora or Canola)
  • Juice of 1 lemon
  • Roasted garlic cloves
  • 1tsp seasoned sea salt (I use Ina Paarmans)
  • 1tsp sugar
  • 1tsp mustard powder
  1. Put yolk, lemon juice, garlic, salt, sugar and mustard powder into a food processor
  2. Slowly drizzle the oil into the whizzing mixture.
  3. If a little runny, add more oil, if a little too thick, add a bit of water
  4. Add lovely fresh yoghurt to thin the fat content.

The flavour…

Add either pesto, fresh herbs (ie. chopped parsley and spring onions, a sprig of mint, etc) chilli ginger jam, sweet chilli sauce or whatever you want to wring the changes of the flavour you are craving.
