Iced & Spiced Tea

The base..

  • 4 cups water
  • ½ cup sugar or honey to sweeten
  • Rind & juice of 2 lemons
  • Rind & juice of 1 orange (if available)
  • 1 cinnamon sticks
  • 2 star anise
  • Few inches of grated fresh ginger (don’t peel)
  • 8 rooibos tea bags
  1. Boil the lot together gently for about 5 mins.
  2. Stir and then leave to cool completely.
  3. Stain and bottle – keep in fridge.

The tea…

  1. Dilute with base with either apple or cranberry juice & water.
  2. This can be served piping hot in winter or iced in summer.
  3. For Iced Tea add lots of ice & float thin lemon slices and mint. Its very refreshing.
  4. For Spiced Tea heat on a stove and drink in front of a roaring log fire...
