The base..
- 4 cups water
- ½ cup sugar or honey to sweeten
- Rind & juice of 2 lemons
- Rind & juice of 1 orange (if available)
- 1 cinnamon sticks
- 2 star anise
- Few inches of grated fresh ginger (don’t peel)
- 8 rooibos tea bags
- Boil the lot together gently for about 5 mins.
- Stir and then leave to cool completely.
- Stain and bottle – keep in fridge.
The tea…
- Dilute with base with either apple or cranberry juice & water.
- This can be served piping hot in winter or iced in summer.
- For Iced Tea add lots of ice & float thin lemon slices and mint. Its very refreshing.
- For Spiced Tea heat on a stove and drink in front of a roaring log fire...
